Today is day 2 of my juice fast. Except for a headache right between my eyes that has, thankfully, eased somewhat, I feel fine. I had a cup of hot green tea with lemon first, and I’ll be having Blackberry-Veggie Juice for the rest of the day. (More on this later.) I could go for a big bowl of kale-navy bean soup minus the sweet potato – my version of the Kale, White bean, and Sweet Potato Soup from Whole Living, which, by the way, is delicious. I’ve fixed it both with and without the sweet potatoes, and either way, it’s a creamy soup. The kale adds a great splash of color, along with a healthy pack of vitamins and minerals!
The juice I’m having today is a delicious Blackberry-vegetable juice. It’s a bit sweet since it has both blackberries and carrots, so I’ve cut the juice with water by half. You can click the image for a larger view. 🙂
In your juicer!
2 large carrots, ends removed
2 Gala apples, cored
1/2 small lemon, zest removed
1 stalk celery, leaves removed
Thaw, press, and remove seeds from 1 cup of frozen blackberries.
Pour into juiced vegetables.
Add up to 1/2 the liquid amount in cold water,
Pour over ice (if desired) and enjoy!
Update: I realize I have Days 1 & 2 running together. That’s what happens when you start your blog just before midnight, and post it after! LOL 😀
